Meat Science faculty and students participate in SMA Convention, 2015

The 59th Annual Convention of the Southwest Meat Association was held at the JW Marriott San Antonio Hill Country Resort & Spa, July 22-25, 2015, and several Meat Science faculty and students were in attendance making new connections or reconnecting with meat industry leaders, helping with the convention, or receiving scholarships including the Bob Ondrusek Memorial Scholarship, the SMIKids Scholarship, and the SMA Foundation Graduate Scholarship. Two long-term fixtures of the Rosenthal Meat Center, Ray Riley and the nationally recognized Texas Aggie Brand Beef Jerky, were featured on the CBS Sunday Morning program on January 18, 2015. The second Beef 101 of the year was completed on June 24-26, 2014. This year marks the 25th anniversary of Beef 101, and another full crowd was in attendance. FFA/4-H Meat Judging Clinic held at Rosenthal Meat Center, March 29, 2014

The Department of Animal Science hosted the FFA/4-H Meat Judging Clinic, which was held at the Rosenthal Meat Center on Saturday, March 29, 2014. Over 300 FFA and 4-H youth participated in the clinic this year where they had the opportunity to hone their meat judging skills in preparation for upcoming contests this spring. Rollstock packaging machine is the newest addition to the Rosenthal Meat Center

The Rosenthal Meat Center has increased its ability to teach packaging technologies through the recent addition of a fully automated Rollstock Packaging Machine. The Rollstock machine is a state-of-the-art packaging system that will vacuum package all types of products. The machine was donated by Texas Meat Purveyors (a division of Freedman Foodservice, LP) in San Antonio, Texas through their General Manager, Dwayne Padalecki.
