2019 Creative Sausage making Course at Texas A&M

The sixth annual Creative Sausage Making class was held on January 11-12, 2019 at the Rosenthal Meat Center. CSM is a joint venture between  the Meat Science Section of the Department of Animal Science at Texas A&M University and Texas A&M AgriLife Extension Service.   Thirty participants, representing barbecue companies, foodservice distributors, retailers, chefs and backyard enthusiasts came to learn sausage production from start to finish. Students participate in Southwest Meat Association Annual Convention and Suppliers Showcase

Students from the Department of Animal Science participated in the Southwest Meat Association’s 62nd Annual Convention and Suppliers Showcase. Many of the students were there to receive a variety of scholarships including the Bob Ondrusek Memorial Scholarships, SMA Hall of Fame Scholarships, and SMA Foundation Scholarships. The SMIKids graduate and undergraduate scholarships were presented to Chandler Steele and Bo Garcia, respectively. Students receive Bob Ondrusek Memorial, SMA Hall of Honor, and SMA Foundation Scholarships at convention

Twenty students from Texas A&M University were the beneficiaries of three different scholarships presented by the Southwest Meat Association at its annual convention: the Bob Ondrusek Memorial Scholarship, the SMA Hall of Honor Scholarship, and the SMA Foundation Scholarship. Grad students provide leadership to Beef 101 program

Beef 101 began in 1989, and from the start, graduate students have played an important role in the success of this program. This is especially evident on day 2 where the participants are assigned to cutting groups, and the grad students lead these groups describing where the cuts are to be made, answering questions about where certain cuts come from, and guidance is given to help preserve the value of the cuts while ensuring the safety of everyone involved when knives and saws are being used. Meat Science Quiz Bowl Team claims Reserve Champion title

The Texas A&M University Meat Science Quiz Bowl Team claimed the Reserve Champion title at the American Meat Science Association Reciprocal Meat Conference held on Sunday, June 18, 2017 at Texas A&M University, College Station. Two teams were entered with one of them making it to the finals before elimination by the eventual champion, Iowa State University. Brogan Horton receives NAMI scholarship

The NAMI Scholarship Foundation announced the recipients of its 2016-2017 undergraduate scholarship awards. Nine high-performing undergraduate students received a combined total of $27,000 to pursue degrees in animal, meat and food science, or in a culinary arts program. Brian Klopf received the Frank DeBenedetti Memorial Scholarship to continue his studies in food science at Iowa State University. The Texas A&M University Quiz Bowl Team competed at the American Meat Science Association Reciprocal Meat Conference at the Angelo State University, San Angelo, Texas on Sunday, June 19, 2016.
