Barbecue camps

Texas A&M University’s Meat Science Department offers two immersive barbecue camps that give you an in-depth understanding of the art and science of barbecue. Whether you’re new to barbecuing or an expert, Barbecue Summer Camp and Camp Brisket have something for you.

At both camps, faculty and industry professionals offer their expertise. You’ll get hands-on experience in meat selection, preparation, seasoning, smoking and grilling techniques. You’ll also learn the science behind meat tenderness, flavor development and cooking methods. In addition, the camps cover important topics like food safety, meat quality, and the history and cultural significance of barbecue.

Barbecue camp options

Camp Brisket

Camp Brisket explores all facets of the centerpiece of Texas Barbecue, the beef brisket. You’ll learn how to cook the perfect brisket and participate in test tastings, too.

Barbecue Summer Camp

At Barbecue Summer Camp, you’ll learn everything you need to be a barbecue expert. Camp topics include pit design and maintenance, methods for adding flavor, and how to cook a whole hog.
