422 Pork Loin, Back Ribs
422 Pork loin back ribs are the portions of the ribs directly ventral (underneath) the pork loin. The back ribs will consist of at least eight ribs, but may have as many as 12-15 depending upon whether it is the whole intact rib section. The body of the vertebrae and the feather bones have been removed from the ribs. The ribs generally have more curvature than spareribs. Oftentimes, there is a portion of the loin muscle (longissimus dorsi) remaining on the dorsal side of the ribs inasmuch as the back ribs are frequently more valuable than the loin itself. The peritoneum (membrane) on the ventral side of the back ribs is recommended to be removed before smoking to enhance tenderness.
