Line of fat observed in New York Strip Steaks
We received a request to answer the question why there was a line of fat sometimes present in beef strip steaks. A customer of a meat purveyor had requested a credit for this “defect,” and this is the photo that was sent to us to help answer why this line of fat was present. Zoetis Beef University, October 23-25, 2013
The Zoetis Beef University program — sponsored by Zoetis Animal Health and conducted at Texas A&M University, College Station — was held on October 23-25, 2013. Texas A&M University Meat Judging Team wins American Royal contest
The Texas A&M University Meat Judging Team won the American Royal Intercollegiate Meat Judging Contest held in Omaha, Nebraska on October 20, 2013. The team practiced at the Rosenthal Meat Center, Tyson Beef (Amarillo, TX), Cargill Beef (Schuyler, NE), and the University of Nebraska before competing in the contest. Three Aggies awarded travel grants to International Livestock Congress, Calgary
Three students from the Department of Animal Science at Texas A&M University were among 20 international students to attend the student program as bursary recipients at this year’s International Livestock Congress – Calgary held in Calgary, Canada on July 10, 2013. The students were Clay Eastwood, a graduate student pursuing her M.S. degree in Animal Science, and Cameron Olson and Jessie Hoffman, who are pursuing their undergraduate degrees in Animal Science. Bob Ondrusek Memorial Scholarship Recipients, 2013-2014
The Bob Ondrusek Memorial Scholarship, which was begun in 2000 by the SMA Foundation, is the greatest source of scholarship funds for undergraduate and graduate students interested in meat science in the U.S. Bob Ondrusek left a lasting impression and impact on so many people through his business, Columbia Packing Company in Dallas, and through his charitable and personal support of the Southwest Meat Association, FFA, 4-H, and many other associations and activities. Meagan Igo joining American Meat Science Association as Youth Programs Coordinator
This is the press release from the American Meat Science Association announcing that Meagan Igo will be joining the association mid-summer. AMSA is excited to announce Meagan Igo will be joining the AMSA team July 1st as the Youth Programs Coordinator. Amanda Smith receives Z.L. Carpenter Outstanding Graduate Student Award
Amanda Smith, a recent Master of Science graduate in the Department of Animal Science with Graduate Certificates in Meat Science and Food Safety, received the Z.L. Carpenter Outstanding Graduate Student Award in Meat Science for 2012. This award is presented annually to a graduate student who demonstrates outstanding leadership skills and has contributed significantly to the Meat Science Section’s teaching, research, and extension activities. Leslie Frenzel receives Distinguished Graduate Student Award in Teaching
Leslie Frenzel, Ph.D. student in the Department of Animal Science, Texas A&M University, received one of the Distinguished Graduate Student Awards in the category of Excellence in Teaching at a ceremony at the Memorial Student Center on Monday, April 29, 2013.
