Retail Sales Outlet
The purpose of the Retail Sales Outlet is to sell meat and dairy products generated by the activities of the Department of Animal Science. The sale of these products compensates for the cost of the livestock, supplies, student labor, and maintenance of the physical facilities. The Retail Sales Outlet is open to the general public Monday through Friday from 9:00 a.m. to 6:00 p.m. and on Saturdays for home football games.
We offer unique Aggie Gift Boxes containing our summer sausage and beef stick products along with cheddar cheese that is perfect for gift giving, tailgate parties, or just plain good eating! Identified with the Aggie logos, this gift box is a popular gift item that can be sent from us to the person of your choice.
Beef Products
All beef - retail cuts, sides, hindquarters, and forequarters - is from grain-fed cattle. Most of the carcasses would grade U.S. Select or U.S. Choice. Our beef is Extra Trim (less than 1/4 inch), and approximately 95% of the cuts are boneless, giving our customers a high percentage of edible portion and low "plate waste." Carcasses are naturally dry-aged to increase tenderness and to give the beef a rich and "beefy" flavor.
Lamb Products
Lambs processed at the RMSTC are from young animals, usually less than one year of age. These lambs produce carcasses that are almost always equivalent to U.S. Choice or U.S. Prime. The lamb cuts are closely trimmed and contain a high proportion of lean.
Pork Products
Our pork is from market hogs that produce carcasses that yield lean and high quality cuts. These fresh pork cuts are closely trimmed, juicy, and flavorful.
The RMSTC is famous for its cured and smoked products. The cured and smoked hams, bacon, and pork chops are tasty and have a fabulous hickory-smoked flavor. The Aggie Ham is a whole, bone-in ham that has been cured, dry-aged, and smoked. This is a ham with that "Old-Fashioned" taste, and it is a great entree for holiday cooking. The Hickory Smoked Bacon is lean, tasty, and thick sliced, providing superb flavor to breakfast or sandwiches. The Hickory Smoked Pork Chops are one-inch thick and are cut from cured and smoked center-cut loins. These chops have distinctive smoky taste that comes from extra-heavy smoking.
Beef Jerky is a flavorful, long-lasting snack. We process beef jerky from sliced top rounds. The slices are cured, peppered, smoked, and dried. Our Texas Aggie Brand Beef Jerky is a great snack for watch Aggie Football games and outdoor activities such as hunting, fishing, and camping, plus it taste great with your favorite beverage!
Sausage Products
Bratwurst - a fresh pork sausage of German origin, which is especially popular for outdoor grilling.
Smoked Sausage - a pork and beef sausage that is cured and fully cooked. Its unique flavor comes from special ingredients and hickory smoke.
Jalapeno Smoked Sausage - a cured and fully cooked pork and beef sausage. Fresh chopped jalapenos give this sausage a unique "southwestern flavor." Makes a fantastic snack or meal when wrapped in a flour tortilla.
Beef Stick - a semi-dry all-beef sausage that has a unique flavor that only hickory smoke can provide. This fully cooked sausage is outstanding with cheese and crackers.
Summer Sausage - a semi-dry sausage with a rich satisfying flavor. This hickory-smoked sausage is fully cooked and can be served with cheese and crackers, sauerkraut, or added to a casserole.
Our Location
The Rosenthal Meat Science and Technology Center is located on the West Campus of Texas A&M University at the north end of Olsen Road, between the Kleberg Center and the Horticulture/Forest Science Building.
